I have the original Moosewood cookbook and The Enchanted Broccoli Forest. I love both, but if you are looking for recipes to replace meat, you might especially like The Broccoli Forest book, as it has a whole section on tofu recipes. I also love the Vegetable Upside Down Cake recipe. Whichever you choose, I don't think you can go wrong with Moosewood!Which Moosewood Vegetarian recipe book has the BEST recipes?
