Yes food has changed since the early eighties. Mainly because there are mixes and blends of spices and things that are no longer available. A new cook book would be nice, but I suspect your mom probably already knows how to substitute for her favorite recipes.
As for the bananas. You will get dozens of recipes here but you should know that you can just throw those bananas in the freezer, peel and all (don't even need a plastic bag!) and take them out and use them when you are in the MOOD for banana bread.
I think recipes have changed simply because we have more fresh produce in our stores today and stores are carrying a wider variety of ingredients now. I think it's because of the Food network. It has inspired more people to cook and try new recipes. I know it has me.
Make banana bread with the old bananas. Or banana cake.
I found an old (1970) cookbook at the library book sale
it was a piece of trash (I made a new binder) and there is one missing one page ..
there are many new recipes but remember,,,
most all are improvements on old favorites
this is the 21st century,,, most every culture is represented every today.. SO changed ??? NO just expanded
yes food has changed but classical dishes are still entertaining
as for your bannanas if they are not too old make bannana bread
no because lots of people eat food in the old days like joney cakes
