There's the new Veganomicon by Isa Chandra Moskowitz and Terry Hope Romero, too. I don't have it yet, but I've been spying it up :).
There are tons of vegetarian and vegan cookbooks.

Check out: ';How it All Vegan!'; and ';Garden of Vegan'; by Sarah Kramer and Tanya Barnard and ';La Dolce Vegan'; by Sarah Kramer

';The Vegetarian Meat and Potatoes Cookbook'; by Robin Robertson

';Conveniently Vegan'; by Debra Wasserman (uses common packaged items for recipes)

';Vegan With A Vengeance'; by Isa Chandra Moskowitz
One of the old all time favorites - Moosewood. The recipes are easy to follow for any level of cooking experience and I have never tried one that I didn't like through out my 35+ years of cooking.
